There are certain procedures that need to be followed in order to store any perishable foods, and to clean and prepare the equipment for the next event.
- Fill the sinks for dishwashing.
- The left sink contains soapy water.
- The center sink contains clear water for rinsing.
- The right sink will contain sanitizing solution (100ppm bleach). The cleaned dishes must soak for 45 seconds in this solution.
- Turn off all warmers, hot dog machines, hot chocolate machines, coffee maker, etc. The longer you can allow food to cool while you do other things, the better.
- Unplug all counter appliances.
- Close and lock all serving windows.
- Clear all serving counters of supplies (cups, straws, napkins, etc), placing them on shelves under the counters.
- Thoroughly clean the counters. Wipe down with sanitizing solution.
- Store candy, nuts, and condiments in the refrigerator.
- Freeze any leftover buns and soft pretzels. Put opened bags of chips in the refrigerator.
- Clean and sanitize the popcorn and hot dog machines.
- Empty all hot foods you are going to save into plastic or glass containers with lids. If cool enough, put in refrigerator.
- Throw away any previously-heated hot dogs.
- Wash all pots, coffee dispensers, utensils, etc. Let air dry.
- Empty the water out of warmer cabinets, rinse, and re-assemble.
- Thoroughly clean hot chocolate machine. Re-assemble.
- Empty water out of the coffee maker. When cool, clean and cover. Be sure to leave unplugged.
- After washing and drying, assemble all warmers.
- Drain the cold drink tubs.
- Sweep and mop the floor.
- Be sure all supplies are stored neatly in the shelves or in the cabinets.
- Gather all wet and dirty towels and dishcloths for washing.
- Be sure that all drinking cups have been removed from cabinets.
- Take trash cans outside.
- Be sure money is delivered to those in charge of money.
- Turn out the lights and lock the door.
Note: It is important to avoid leaving water in warming units. Although they are stainless, they will stain, and eventually rust.
