Concession Stand Closing Procedures

There are certain procedures that need to be followed in order to store any perishable foods, and to clean and prepare the equipment for the next event.

  1. Fill the sinks for dishwashing.
    1. The left sink contains soapy water.
    2. The center sink contains clear water for rinsing.
    3. The right sink will contain sanitizing solution (100ppm bleach).  The cleaned dishes must soak for 45 seconds in this solution.
  2. Turn off all warmers, hot dog machines, hot chocolate machines, coffee maker, etc. The longer you can allow food to cool while you do other things, the better.
  3. Unplug all counter appliances.
  4. Close and lock all serving windows.
  5. Clear all serving counters of supplies (cups, straws, napkins, etc), placing them on shelves under the counters.  
  6. Thoroughly clean the counters.  Wipe down with sanitizing solution.
  7. Store candy, nuts, and condiments in the refrigerator.
  8. Freeze any leftover buns and soft pretzels. Put opened bags of chips in the refrigerator.
  9. Clean and sanitize the popcorn and hot dog machines.
  10. Empty all hot foods you are going to save into plastic or glass containers with lids. If cool enough, put in refrigerator.
  11. Throw away any previously-heated hot dogs.
  12. Wash all pots, coffee dispensers, utensils, etc. Let air dry.
  13. Empty the water out of warmer cabinets, rinse, and re-assemble.
  14. Thoroughly clean hot chocolate machine. Re-assemble.
  15. Empty water out of the coffee maker.  When cool, clean and cover. Be sure to leave unplugged.
  16. After washing and drying, assemble all warmers.
  17. Drain the cold drink tubs.
  18. Sweep and mop the floor.
  19. Be sure all supplies are stored neatly in the shelves or in the cabinets.
  20. Gather all wet and dirty towels and dishcloths for washing.
  21. Be sure that all drinking cups have been removed from cabinets.
  22. Take trash cans outside.
  23. Be sure money is delivered to those in charge of money.
  24. Turn out the lights and lock the door.

    Note: It is important to avoid leaving water in warming units. Although they are stainless, they will stain, and eventually rust.
